A Chesapeake Bay Classic Full of Sweet Crab, Garden Vegetables & Old Bay Comfort

There are few things more iconic in Maryland than a steaming bowl of homemade Maryland crab soup. It’s rich without being heavy, deeply comforting, and absolutely packed with vegetables, tomatoes, herbs, and glorious sweet Maryland lump crab meat. Every family around the Chesapeake seems to have their own version, but the heart of the soup always remains the same: fresh crab, Old Bay seasoning, and a broth that tastes like Maryland itself.

This is the kind of soup that warms your soul on a rainy afternoon, tastes even better the next day, and instantly transports you to a dockside restaurant overlooking the Bay.

And yes — this recipe tastes like it came straight from a Maryland grandmother’s kitchen.

  • 4 cloves garlic, minced

Vegetables

  • 2 cups cabbage, chopped
  • 1 cup green beans, cut into bite-size pieces
  • 1 cup corn kernels
  • 1 cup peas
  • 2 potatoes, peeled and diced
  • 1 cup lima beans (optional but very Maryland)

Broth & Tomatoes

  • 1 large can (28 oz) crushed tomatoes
  • 1 small can tomato sauce
  • 6 cups beef broth
  • 2 cups chicken broth
  • 2 tablespoons Worcestershire sauce

Seasonings

  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 2 bay leaves
  • 1 teaspoon parsley
  • Pinch of crushed red pepper flakes (optional)

The Star of the Show

  • 1 pound fresh Maryland lump crab meat
  • 1 tablespoon fresh lemon juice

Instructions

Step 1: Build the Flavor

In a large stockpot or Dutch oven, heat olive oil over medium heat.

Add onions, celery, carrots, and bell peppers. Sauté for about 8 minutes until softened and fragrant.

Add garlic and cook for another minute.

At this point, your kitchen should already smell incredible.

Step 2: Add the Vegetables

Stir in the cabbage, potatoes, green beans, corn, peas, and lima beans.

Pour in the crushed tomatoes, tomato sauce, beef broth, and chicken broth.

Add Worcestershire sauce, bay leaves, Old Bay, paprika, salt, pepper, parsley, and red pepper flakes.

Bring the soup to a gentle boil.

Step 3: Slow Simmer

Reduce heat to low and simmer uncovered for 40–45 minutes until the vegetables are tender and the broth becomes deeply flavorful.

This is where Maryland crab soup develops its signature taste — rich tomato broth infused with vegetables and Chesapeake seasoning.

Step 4: Add the Crab

Gently fold in the Maryland lump crab meat during the final 5 minutes of cooking.

Do not over-stir. You want those beautiful crab lumps to stay intact.

Finish with fresh lemon juice for brightness.

Chef’s Notes

The secret to outstanding Maryland crab soup is balance:

  • Enough vegetables to make it hearty
  • Enough tomato for richness
  • Enough Old Bay for that unmistakable Maryland flavor
  • And enough crab to make every bite memorable

Many Maryland cooks swear the soup tastes even better the next day after the flavors marry overnight — and honestly, they’re right.
